We harvest early, while the olive is still green, because that is when the oil gains the most fruitiness and character. We invite you to experience this moment with us, from the inside.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eWe begin as we do at home to open the season: with a grilled farmhouse breakfast at the Mas, among olive trees, accompanied by Algés wine from Clos Pons. Afterward, we walk through the PONS Varietal Garden, where the family has been cultivating more than 300 varieties of olive trees since 2003, and hike up to the plot.
