Vegetation Cover in Olive Groves: The Agronomic Decision That Regenerates Soil

Every spring, before the olive tree blossoms, our streets are covered with vegetation. It is not spontaneous grass; it is a sown cover with intention, an agronomic decision that we have been refining for years on the calcareous soils of Les Garrigues.

The mix: 60% grasses, 40% legumes

In our hedge plantations, we sow a mixture composed of 60% grasses and 40% legumes. Each group fulfills a distinct and complementary function.

Grasses (Festuca arundinacea, Dactylis glomerata, and Bromus inermis, in equal proportions) rapidly colonize the terrain. Their dense growth and ease of multiplication protect the soil from the first months of planting, when the risk of erosion and soil loss is greatest.

Legumes (alfalfa, Medicago sativa, and sainfoin, Onobrychis viciifolia) work over the long term. Their deep root system anchors the soil, improves water infiltration, and fixes atmospheric nitrogen, which becomes naturally available for the crop. As flowering species, they also attract beneficial insects.

Three functions for the soil

The cover fulfills three mutually reinforcing functions:

  • Physical protection: it cushions the impact of rain, slows erosion, and limits compaction that closes soil porosity.
  • Microbial life: roots and organic matter feed soil biology (fungi, bacteria, microfauna), responsible for its structure and nutrient cycles. A biologically active soil makes a wide range of mineral elements accessible that the plant, on its own, could not extract.
  • Organic matter contribution: the mowed biomass returned to the soil, along with the constant renewal of the root system, increases the organic matter content season after season.

Why it matters more in calcareous soil

This is especially important in our region. These are calcareous soils, with shallow effective depth and naturally demanding. In such soil, every point of organic matter and every structural improvement has a disproportionate effect on water retention and fertility. The limitation is managed; it is not ignored.

Management, not abandonment

Maintaining a cover of high agronomic interest and low maintenance is not about letting it grow. It is about management. We choose multi-year cycle species or those with good spontaneous reseeding to ensure their permanence, and we manage them with selective mowing and mechanical means, without herbicides. The timing of each mowing is crucial: it favors the multiplication of desirable species over undesirable ones, and prevents the cover from competing with the olive tree for water and nutrients during critical periods. It is a system that requires knowledge of the territory and continuous learning, not just recipes.

From soil to crop health

The diversity of the cover doesn't end underground. Flowering species support populations of beneficial insects and pollinators which, along with stone margins, wooded areas, and other ecological infrastructures on the farm, form a reservoir of biodiversity. The greater the diversity of life, the harder it is for pests and pathogens to establish themselves. This often allows us to reduce phytosanitary intervention and maintain what we at PONS call ecological balance.

The fourth-generation criterion

Well-maintained soil improves from one harvest to the next. Depleted soil does not. We are the fourth generation working this land under organic certification, and the criterion remains the same: to return it better than we received it. The cover crop is one of the most concrete tools to achieve this, and it shows where it matters most: in plant health and fruit quality.
