Sensaciones del territorio Clos Pons - pons1945.com

Flavors of the Clos Pons territory

“Tast Clandesti” by Llúcia Castaño was another step forward. Another step towards finding universal tourism.

The experience consists of 5 stops at different spots on the estate, each appealing to one of the 5 human senses.

So, we began our first encounter at the winery gates, where we handed out the kit (wine glass holder, glass, napkin, blindfold, and hat) essential for the experience.

We started walking and reached the first point, sight, where we could admire the beauty of the estate from its winery viewpoint. We saw the vineyard terraces and, in the background, the restored winery that maintains the authentic character of the Garrigas region with its stone. We tasted a glass of Jan Rose with a smoked sardine toast, seasoned with oil by the winery's chef, Victor.

We walked through the estate, among vineyards and olive trees, to the second point, smell, an saffron plantation. There, we learned more about saffron cultivation and tasted an unusual white wine, a blend of Garnacha Blanca and Albariño, paired with salmon tartare and saffron mayonnaise, seasoned with their JaniRoc "Lecciana" and JaniRoc "Jardí Varietal" olive oils.

Point 3, more Pons, where touch took over, as we were able to feel the stone walls surrounding the estate and the stone house. We paired this with Algés wine, the iconic wine of the winery, which has a stony mouthfeel due to its Garnacha, Syrah, and Tempranillo grapes. We paired it with slow-cooked lamb and extra virgin olive oil.

Finally, we moved on to the sense of hearing. I saw that the group got along very well and was up for anything, so we blindfolded them with the kit's blindfolds and, forming a train, we walked about 10 meters to the magical place that the estate exudes, the most stable place on the estate, the cave. A cave where, upon entering, the temperature, humidity, and feeling of coolness completely changed our perceptions.

so we tasted El Pla del Tet, a single varietal Syrah, unique for its exclusivity and limited production. It was paired with local cheeses and Koroneiki (Greek) olive oil.

We finished the last stop as the sunset accompanied us at the Clos Pons winery, where lightning provided light like fireworks. We enjoyed a glass of Flocs rosé cava paired with coca de Sant Joan and emulsified mandarin oil.

A culmination of sensations and emotions, getting to know all the winery's products through the 5 senses.

A magical evening, thanks to the entire Clos Pons team for their kindness and for making this experience of local sensations possible.

Llúcia Castaño, Sommelier
