Extra virgin olive oil from Spain: how to know if it's really the best

Key points for specialized buyers and importers in the US

Extra virgin olive oil from Spain that can be proven, not just claimed: that's what a specialized buyer is actually looking for when evaluating a supplier. Since 1945, four generations of the Pons family have farmed their estates in Lleida under a fully vertically integrated model, where the same company controls the grove, the mill, the lab analysis and the export operation.

A guaranteed phenolic profile, verified lot by lot and backed by a traceable methodology and accessible certificates of analysis, is what separates a producer who can prove quality from one who simply states it. For B2B buyers in the US specialty segment, that documentation is what supports their own commercial claims to the end customer.

What importers are really asking when they want to know which Spanish EVOO is the best

The question that comes up most often in the specialized import market isn't "which one tastes better?" but "how can I verify the quality this supplier claims to offer?". Behind it sits a concrete commercial need: the importer has to back their own quality promise with technical documentation that comes directly from the producer.

In a B2B context, whether a Spanish extra virgin olive oil ranks among the best doesn't depend on an award or an appealing tasting note. It depends on whether the producer can link every lot to verifiable data: variety, harvest date, analytical parameters before and after milling, and traceability from the estate to the pallet.

What sets a premium extra virgin olive oil apart

Variety and region of origin matter, but they don't explain final quality on their own. What sets a premium oil apart is the chain of controlled decisions that starts at the tree and ends at the bottle, and the producer's ability to document each of those decisions. Three variables account for most of the technical difference between a premium oil and a standard one.

The interval between harvest and milling

Every hour that passes between picking the fruit and it entering the mill can degrade the phenolic compounds directly tied to the oil's stability and organoleptic profile. At PONS, that interval is under thirty minutes, possible because the mill sits on the estate itself: around 500,000 olive trees in Lleida, Catalonia.

Cold extraction: milling and malaxation

PONS processes the olives through biotechnological mills designed to protect phenolic compounds and aromatic profile during milling. Malaxation runs under 15 minutes in sealed vertical malaxers that cut paste exposure to oxygen by 70%, while cylindrical cold jackets hold the paste at a constant 26°C.

Analytical control of every lot

Quality control runs in two phases. Before milling, NIR spectroscopy analyzes each field lot on the whole, unground olive, setting the optimal harvest point based on acidity, moisture, fat content, polyphenols, ripeness index and fruit health. After milling, an in-house team of food chemists analyzes the extracted oil by liquid chromatography.

The difference matters for any buyer who will be making quality claims in their own market: a producer that guarantees a minimum phenolic content across the whole campaign, not just the year's best result, operates at a different level of control.

Documentation an importer can put to commercial use

An oil can have excellent organoleptic qualities and still lack the documentation a high-end distributor or a foodservice operator needs to turn that quality into their own sales argument. In markets like the US, the value of a Spanish extra virgin olive oil doesn't rest on the product alone: it also depends on the documented supply system behind it, with lot records, analytical reports by variety and certificates of origin available from first contact.

The phenolic profile of the JANIROC collection is verified under PONS's agreement with the Antioxidants Research Group at the Universitat de Lleida, led by researchers Laura Rubió Piqué and Alba Macià i Puig, using UPLC-DAD-MS/MS methodology. The full analysis is available in the Universitat de Lleida's phenolic analysis.

Guaranteed phenolic content of the JANIROC collection

The table below shows the guaranteed phenolic content by variety, alongside the 2025/26 harvest lot analysis using two different methodologies.

Variety Guaranteed content 2025/26 lot · COI method 2025/26 lot · UPLC-MS/MS (UdL)
JANIROC Arbequina From 325 mg/kg 482 mg/kg 652 mg/kg
JANIROC Lecciana From 450 mg/kg 483 mg/kg 410 mg/kg
JANIROC Koroneiki From 500 mg/kg 671 mg/kg 627 mg/kg

The two analytical columns aren't directly comparable. The official COI method (COI/T.20/Doc. 29, HPLC-DAD) measures total biophenols expressed as tyrosol equivalents; UPLC-MS/MS quantifies each compound individually against specific commercial standards. Guaranteed content always refers to the COI method, the one recorded on each lot's certificate of analysis.

Why polyphenol content varies from lot to lot

Polyphenol content isn't a fixed trait of a variety. It varies with the plot, the water the tree received, crop load, the time between harvest and milling, and the length and temperature of malaxation. It also declines progressively during bottle storage. That's why PONS analyzes every lot on its own HPLC at the mill and guarantees the minimum it can sustain across the whole campaign, not the year's best analytical result.

Under EU Regulation 432/2012, olive oil polyphenols contribute to the protection of blood lipids from oxidative stress when the oil provides at least 5 mg of hydroxytyrosol and its derivatives per 20 g of olive oil consumed daily. All three JANIROC varieties exceed the 250 mg/kg threshold the regulation uses to define a high-phenolic-content oil.

Certifications and recognitions that matter to US institutional buyers

Beyond in-house analytical documentation, institutional buyers look for certifications from recognized bodies that independently confirm production standards. The JANIROC collection holds EU Organic certification issued by CCPAE and USDA Organic (NOP) certification for the US market. PONS is also listed in the official producer guide of the New York International Olive Oil Competition, with an established presence in the US specialty market.

Why PONS is a verifiable reference for the B2B channel

When one entity controls cultivation, harvest, extraction and lot-by-lot analysis, the buyer isn't relying on generic claims: they can access the documentation behind them. PONS has more than 50 years of export experience, a presence in more than 140 countries, and a commercial relationship of over 12 years with a distributor on the US East Coast.

Its US operations are also backed by Casa Pons USA, based in Parsippany, New Jersey, which provides local regulatory and logistical support for FDA and USDA compliance, with no additional intermediaries.

Frequently asked questions for buyers and importers

What certifications does a Spanish olive oil producer need to export to the US?

FDA registration and compliance with the requirements applicable to the product and its marketing in the United States are the starting point. To market a product as organic in the US, USDA Organic (NOP) requirements must also be met. Operators supplying markets with their own rules, such as California, should also check the applicable state standards.

Can a Spanish producer guarantee a consistent supply volume for US distributors?

That depends on production capacity, control over production assets, campaign planning and export experience. A guaranteed phenolic minimum by lot demonstrates a commitment to analytical quality, but it shouldn't be confused with a volume guarantee. A track record of more than 50 years of export activity and a presence in more than 140 countries is, in any case, a reference point for the producer's operational experience in international markets.
