Ingredients
- 115 g chocolate (min. 70% cocoa)
- 1 'Golden' apple
- 80 ml organic EVOO Selección Familiar
- 70 g spelt flour
- 30 g powdered cocoa
- 1 pinch of salt
- 3 eggs
- 160 g cane sugar

Method
- Peel and cut the golden delicious apple into small dice and scald in boiling water for 1 minute. Drain, allow to cool and set aside.
- In a bowl, beat the eggs and cane sugar with a whisk until the mixture doubles in size.
- Melt the chocolate in a bain-marie, making sure no water gets in. You can also melt it in the microwave, being careful not to burn it. (35 ºC)
- Once melted, wait for the chocolate to cool to 30 ºC, then gradually stir in the organic EVOO until both elements blend together.
- Pour the chocolate and EVOO mixture into the bowl with the eggs and sugar. Stir together.
- Sift the flour with the cocoa, add the salt and set aside.
- Add the sifted flour and pinch of salt progressively, stirring gently with the whisk to blend into the mixture.
- Add the diced apple and stir in delicately.
- Line a baking tray with baking paper and pour in the brownie batter.
- Spread the batter evenly using a spatula or spoon.
- The batter should be about 2 cm deep (choose the right tray size accordingly).
- Bake in the preheated oven at 180 ºC for 20-22 minutes.
- To check if the brownie is cooked, stick in a toothpick: it should come out damp but clean.
- Allow to cool and cut into portions.
